Apple Banana Bread

Apple Banana Bread
- 3/4 cup Unsalted butter
- 1 2/3 cup Granulated sugar
- 2 Large eggs
- 2/3 teaspoons Vanilla extract
- 8 -12 Ripe apple bananas
- 2 3/4 cup Bread flour
- 1 1/3 teaspoons Kosher salt
- 1 1/3 teaspoons Baking soda
Mac Nut Streusel (Optional)
- 1/2 cup Brown sugar
- 1/2 cup AP Flour
- 1/2 teaspoon Cinnamon
- 1/4 cup Mac nuts, chopped
- 1 tablespoon Roasted sesame seeds
- 1/4 cup Unsalted butter, cubed
- 1/4 cup Coconut flakes
- 1 tablespoon Myer's Rum
Preparing the Streusel
In a bowl, combine brown sugar, flour, cinnamon, mac nuts, sesame seeds, and coconut.
Cut in the butter until the mix resembles coarse crumbs.
Drizzle in the rum and lightly toss—don’t overmix or it’ll clump.
Chill until ready to use. Sprinkle generously over banana bread batter before baking.
Making Banana Bread
Preheat oven to 350°F (175°C). Grease and line a loaf pan.
Cream butter and sugar until light and fluffy.
Add eggs one at a time, then mix in vanilla.
Mash bananas separately, then fold into wet mixture.
In another bowl, whisk together flour, salt, and baking soda.
Gently fold dry mix into wet until just combined (don’t overmix).
Pour batter into prepared pan. Top with Mac Nut Streusel (from earlier).
Bake 45 - 55 minutes, until a cake tester (or toothpick) comes out clean. Cool before slicing
