Asian Style Meatloaf

Servings 1 Large Meatloaf or 2 Small Meatloaf
- 2 cup bread crumbs or panko
- 2 clove garlic, finely chopped
- 1 thumb sized piece of fresh ginger, peeled and finely chopped
- 1 medium onion, finely chopped
- 1 celery, finely chopped
- 1 medium carrot, finely chopped
- 1.5 pound ground beef, extra lean
- 1.5 pound ground pork
- 0.25 pound diced portuguese sausage or lup cheong
- 1 large egg
- 0.25 cup ketchup
- 1 tablespoon Colemans dry mustard
- 1 tablespoon Worcestershire sauce
- Coarse salt and freshly ground pepper
