Ingredients  

  • 1 boneless chuck roast (4-5 lbs.)
  • unknown salt and ground pepper
  • 2 tablespoon vegetable oil
  • 1 cup chopped onions, 1" pieces
  • 1 cup chopped carrots, 1" pieces
  • 1 cup chopped celery, 1" pieces
  • 2 bay leaves
  • 1 teaspoon dry thyme or 2 fresh sprigs
  • 4 cup beef stock or broth
