- 1 cup chopped onions, 1" pieces
- 1 cup chopped carrots, 1" pieces
- 1 cup chopped celery, 1" pieces
- 2 bay leaves
- 1 teaspoon dry thyme or 2 fresh sprigs
- 4 cup beef stock or broth
