Green Papaya Chicken Soup with Ginger

- 2 tablespoon vegetable oil
- 1 yellow onion(peeled and cut into slices)
- 0.75 pound boneless, skinless chicken thighs(cut into 1 inch pieces, excess fat removed)
- 1 each 2 inch piece ginger(peeled, sliced into fine strips)
- 2 garlic cloves(peeled and chopped)
- 2 quart chicken broth
- 1 green papaya(peeled, seeded and cut into 1 inch pieces)
- 2 tomatoes cut into 1 inch pieces
- 1 cup watercress or other braising green
- fish sauce, to taste
- fresh calamansi or lime juice, to taste
