- 1 ripe pineapple, peeled and eyes removed, cored, and cut into eight-3/4" rounds
- 0.5 cup dark rum
- 0.5 cup packed light brown sugar
- 0.25 cup passion fruit juice concentrate
- 1 tablespoon fresh lime juice
- unit coconut, macadamia or vanilla ice cream
- unit crushed macadamia nut brittle or almond roca
