  • 0.5 pound elbow macaroni
  • 3 tablespoon Butter
  • 0.25 cup yellow onion, finely diced
  • 1 clove garlic clove, minced
  • 3 tablespoon flour
  • 3 cup milk
  • 1 bay leaf
  • 0.5 teaspoon paprika
  • 1 tablespoon dijon mustard
  • 8 ounce sharp cheddar, shredded plus extra for garnish
  • 6 ounce gruyere, shredded
  • 1 ounce freshly grated parmesan plus extra for garnish
  • 1 teaspoon kosher salt
  • Fresh black pepper
  • Chopped Bacon Bits (optional)
  • Fresh diced tomatoes (optional)
