Maui Onions with Ham and Shiitake Mushrooms

Ingredients  

  • 8 tablespoon butter
  • 4 tablespoon brown sugar (optional)
  • 4 shallots, chopped
  • 4 garlic cloves, chopped
  • 4 teaspoon fresh rosemary, chopped
  • 4 teaspoon fresh thyme, chopped
  • 4 large shiitake mushroom caps, sliced
  • 4 ounce ham, smoked ham or bacon, sliced into strips
  • 4 aluminum foil, around 1 ft. square
  • 4 Maui onions
  • unit salt and freshly cracked pepper, as needed
  • 8 tablespoon sherry vinegar
  • 4 tablespoon beef, chicken or veal broth
  • 3 tablespoon extra virgin olive oil
  • 4 tablespoon chives, chopped
  • 1 ripe tomato, diced
