Ingredients  

  • 4 cup kosher salt or 2 cups table salt
  • 1 turkey (12-14 lbs. gross weight), rinsed thoroughly, giblets, neck and tailpiece removed and reserved to make gravy
  • 1.5 medium onions, coarsely chopped
  • 1.5 medium carrots, coarsely chopped
  • 6 thyme
  • 2 lemons, cut into quarters
  • 5 garlic cloves, peeled and smashed
  • 1 stick of butter, melted
