Pineapple Bourbon Beef Ribs

Ingredients  

  • Sauce
  • 0.5 cup vegetable oil
  • 0.5 medium onion, minced
  • 2 garlic cloves, minced
  • 0.5 pineapple, skinned, cored and minced
  • 0.5 cup bourbon
  • 3 cup ketchup
  • 0.5 cup light molasses
  • 0.5 cup honey
  • 0.25 cup balsamic vinegar
  • Ribs
  • 2 whole or split beef back ribs racks, about 10 lbs.
  • 2 tablespoon kosher salt
  • 2 teaspoon coarse ground black pepper
  • 1 medium yellow onion, chopped 1"
  • 1 bunch celery, chopped 1"
  • 1 pound carrots, chopped 1"
  • 2 garlic cloves, chopped
  • 2 fresh thyme
  • 4 tablespoon black peppercorns
  • 2 pale ale bottles
