Strawberry Tapioca Pudding

Strawberries add a sweet and fruity twist on traditional tapioca pudding. The perfect dessert for Valentine's Day or any celebration.

Ingredients  

  • 1 Reese Small Pearl Tapioca, 8 oz(1 bag)
  • 8 cup water
  • 10 ounce Fresh Strawberries, stems removed
  • 0.25 cup mirin
  • 0.5 cup sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1 tablespoon fresh mint, julianned

Notes

This can be made several days in advance and stored in the refrigerator covered. Garnish just before serving.
