Szechuan Pork and Eggplant

Ingredients  

  • 0.5 pound ground pork
  • 2 tablespoon shoyu
  • 1 tablespoon dry sherry or rice wine
  • 4 tablespoon vegetable oil
  • 1 tablespoon chili-bean sauce
  • 2 clove garlic, chopped
  • 1 teaspoon minced fresh ginger
  • 1 cup Salt
  • 1.25 pound long eggplant, cut into 3/4 inch x 2 inch strips
  • 1 tablespoon sugar
  • 1 cup chicken broth
  • 1 tablespoon apple cider or balsamic vinegar
  • 2 teaspoon cornstarch
  • 2 teaspoon sesame seeds, toasted
  • 2 scallions, white and light green parts only, finely chopped

Notes

Oyster sauce can be used as a finishing sauce if desired along with a drizzle of sesame oil.
