Edamame Hummus

A fresh take on classic hummus that pairs well with the "local" palette!

Ingredients  

  • 1 frozen shelled edamame
  • 0.25 cup tahini
  • 1 freshly grated lemon zest from 1 lemon
  • 1 clove garlic, smashed
  • 1 1/2" piece of young ginger, peeled and rough chopped
  • 0.75 teaspoon kosher salt
  • 0.125 cup olive oil (you can substitute half with extra virgin olive oil)
  • 1 tablespoon chopped fresh Chinese parsley
  • Extra virgin olive oil for garnish
