Honey Glazed Pork Belly Fried Rice

- 3-4 strips of Maika'i Honey Glazed Pork Belly
- 2 Eggs
- 4 cups Rice preferably day-old
- 2 cups Frozen mixed vegetables
- 1 tablespoon Bachan's Japanese Barbecue Sauce
- Green onion optional
- Chinese parsley optional
- Kim chee optional
- Pickled red onion optional
Start by cutting the pork belly strips into small 1/2-inch slices so it cooks up crispy.
Sear the pork belly bites in a pan and flip until both sides are evenly browned. Then transfer them onto a plate with a paper towel to drain excess oil.
Whisk eggs and scramble in the same pan with leftover pork belly oil.
Once eggs are slightly runny and still undercooked, add in the rice. Mix well and break up any large clumps with your spatula.
Add in the frozen vegetables and stir until the rice and veggies are heated through over medium heat.
Lower heat and add in the cooked pork bites. Mix everything well together.
Add Bachan’s Japanese Barbecue sauce and cracked black pepper to taste.
Optional: Add in green onion and/or Chinese parsley. Serve and enjoy with kimchee or pickled red onions.
