Heat your grill to a high heat, cook the pork until evenly charred and cooked through. Set aside to cool
Once pork is cool, slice into thin long strips
Gather all ingredients to assemble the rolls, including a bowl of warm water large enough to dip the wrappers in and a lightly damp towel.
Assemble each roll, one at a time. Dip the wrapper in the water and carefully lay on the damp towel.
Working quickly, spread the rice in a 3” rectangle in the center, top with the pork, cucumber, green onion and cilantro.
Take the bottom seam and fold it over the ingredients and tuck them in gently. Fold in the sides toward the center then roll forward to complete.
Repeat with the remaining wrappers. Cut in half and serve
