In a microwave safe bowl, combine the mochiko, sugar, milk, and ½ cup of water and mix with a whisk thoroughly. It’s important to whisk out the lumps for a smooth texture.
Microwave bowl for 1 minute and stir well. Then microwave again for 1 minute and stir well. Microwave one last time for 30 seconds and stir well.
Cool mochi for 20-30 minutes then cut into ½ inch cubes.
Slice strawberries and lightly toss with sugar if needed.
Layer mochi cubes, Cool Whip, and strawberries in cups or bowl; repeat to desired number of servings.
Chill for 30-60 minutes before serving.
