Summer Fruit Gratin

- 4 1/2 cups Nectarine or peaches, cut into wedges
- 3 slices Sandwich bread, torn into quarters
- 1/4 cup Brown sugar
- 1 pinch Salt
- 1 pinch Cinnamon
- 1 tablespoon Thai basil, 8-12 leaves
- 1 tablespoon Sugar (optional)
Preheat oven to 400°F.
In a 2 quart size oven safe glass baker, gently toss fruit with sugar (if using) and add some of the Thai basil. Save some Thai basil for garnish. Lay out evenly.
In a food processor, gently pulse the bread, butter, sugar, and spices to resemble crumbles. Sprinkle this topping evenly over the summer fruit mix.
Bake approximately 15-20 minutes or until golden brown and the fruit is hot.
Cool on a wire rack for 5 minutes, garnish with the Thai basil, then serve.
