dijon mustard 1
orange (juice of one orange) 1⁄2 teaspoon
Salt 1 pinch
Black Pepper 1⁄4 cup
olive oil 1 bunch
kale (thick stems removed, washed and cut into 2" sections) 1
apple (cored, thinly sliced) 1⁄8 cup
red onion (finely chopped) 2 tablespoons
sunflower seeds (toasted)Instructions
In a large bowl, combine the mustard, orange juice, salt, pepper and olive oil. Whisk to incorporate. Add in the kale, apple, onion and toss to incorporate. Garnish with sunflower seeds and cheese.
