Poke Spam Musubi

Equipment
- SPAM Musubi Mold
Ingredients
- 1 can SPAM
- 3 tablespoons Mr. Yoshida Sauce or Shoyu
- 2 cups Rice
- Sushi rice seasoning (optional)
- 6 pieces Nori
- Foodland Poke of your choice
- Furikake (optional)
Instructions
- Rinse 2 cups of sushi rice under cold water until the water runs clear. Cook the rice according to package instructions (using a rice cooker or stovetop).
- Slice the Spam into 6 equal pieces (or to desired cut).
- Heat a pan over medium heat and pan-fry the Spam slices for about 2 minutes on each side until golden brown.
- Pour 3-4 tablespoons of Mr. Yoshida sauce or shoyu over the Spam slices and cook for another minute, flipping to coat evenly. Remove from heat and set aside.
- Place a strip of nori on a clean surface (shiny side down) then place the musubi mold on top of the nori strip.
- Add a layer of rice inside the mold (about ½ inch thick) and press gently.
- Add a layer of Foodland Poke, about 2 tablespoons per musubi, and press gently.
- Place a slice of glazed Spam on top of the layer of poke.
- Top with a layer of rice and press gently. Optional: add furikake on top of rice.
- Remove the mold, then tightly wrap the nori around the rice and Spam. Seal the nori with a little water.
