Apple Banana Bread

Chef Nick’s Apple Banana Bread with Mac Nut Streusel is the ultimate upgrade to this local favorite -perfectly moist with a delightful, crunchy, and nutty topping.

Ingredients  

Apple Banana Bread

  • 3/4 cup Unsalted butter
  • 1 2/3 cup Granulated sugar
  • 2 Large eggs
  • 2/3 teaspoons Vanilla extract
  • 8 -12 Ripe apple bananas
  • 2 3/4 cup Bread flour
  • 1 1/3 teaspoons Kosher salt
  • 1 1/3 teaspoons Baking soda

Mac Nut Streusel (Optional)

  • 1/2 cup Brown sugar
  • 1/2 cup AP Flour
  • 1/2 teaspoon Cinnamon
  • 1/4 cup Mac nuts, chopped
  • 1 tablespoon Roasted sesame seeds
  • 1/4 cup Unsalted butter, cubed
  • 1/4 cup Coconut flakes
  • 1 tablespoon Myer's Rum

Instructions 

Preparing the Streusel

  • In a bowl, combine brown sugar, flour, cinnamon, mac nuts, sesame seeds, and coconut.
  • Cut in the butter until the mix resembles coarse crumbs.
  • Drizzle in the rum and lightly toss—don’t overmix or it’ll clump.
  • Chill until ready to use. Sprinkle generously over banana bread batter before baking.

Making Banana Bread

  • Preheat oven to 350°F (175°C). Grease and line a loaf pan.
  • Cream butter and sugar until light and fluffy.
  • Add eggs one at a time, then mix in vanilla.
  • Mash bananas separately, then fold into wet mixture.
  • In another bowl, whisk together flour, salt, and baking soda.
  • Gently fold dry mix into wet until just combined (don’t overmix).
  • Pour batter into prepared pan. Top with Mac Nut Streusel (from earlier).
  • Bake 45 - 55 minutes, until a cake tester (or toothpick) comes out clean. Cool before slicing
