Chef Nick’s Apple Banana Bread with Mac Nut Streusel is the ultimate upgrade to this local favorite -perfectly moist with a delightful, crunchy, and nutty topping.
Ingredients
Apple Banana Bread
- 3/4 cup Unsalted butter
- 1 2/3 cup Granulated sugar
- 2 Large eggs
- 2/3 teaspoons Vanilla extract
- 8 -12 Ripe apple bananas
- 2 3/4 cup Bread flour
- 1 1/3 teaspoons Kosher salt
- 1 1/3 teaspoons Baking soda
Mac Nut Streusel (Optional)
- 1/2 cup Brown sugar
- 1/2 cup AP Flour
- 1/2 teaspoon Cinnamon
- 1/4 cup Mac nuts, chopped
- 1 tablespoon Roasted sesame seeds
- 1/4 cup Unsalted butter, cubed
- 1/4 cup Coconut flakes
- 1 tablespoon Myer's Rum
Instructions
Preparing the Streusel
- In a bowl, combine brown sugar, flour, cinnamon, mac nuts, sesame seeds, and coconut.
- Cut in the butter until the mix resembles coarse crumbs.
- Drizzle in the rum and lightly toss—don’t overmix or it’ll clump.
- Chill until ready to use. Sprinkle generously over banana bread batter before baking.
Making Banana Bread
- Preheat oven to 350°F (175°C). Grease and line a loaf pan.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, then mix in vanilla.
- Mash bananas separately, then fold into wet mixture.
- In another bowl, whisk together flour, salt, and baking soda.
- Gently fold dry mix into wet until just combined (don’t overmix).
- Pour batter into prepared pan. Top with Mac Nut Streusel (from earlier).
- Bake 45 - 55 minutes, until a cake tester (or toothpick) comes out clean. Cool before slicing
