Strawberry Mochi Trifle

Ingredients  

  • 1 cup Mochiko flour
  • 3/4 cup Granulated sugar
  • 1 8 ounce tub Cool Whip
  • 1 1/2 cup Coconut milk
  • 2 pounds Fresh strawberries washed, cut in half, stemmed and dried

Instructions 

  • In a microwave safe bowl, combine the mochiko, sugar, milk, and ½ cup of water and mix with a whisk thoroughly. It’s important to whisk out the lumps for a smooth texture.
  • Microwave bowl for 1 minute and stir well. Then microwave again for 1 minute and stir well. Microwave one last time for 30 seconds and stir well.
  • Cool mochi for 20-30 minutes then cut into ½ inch cubes.
  • Slice strawberries and lightly toss with sugar if needed.
  • Layer mochi cubes, Cool Whip, and strawberries in cups or bowl; repeat to desired number of servings.
  • Chill for 30-60 minutes before serving.
