Citrus Oregano Marinade for Poulty and Light Meats

A perfect way to add some zing to chicken and meat
Servings 1 Servings


  • 0.25 cup olive oil
  • 0.5 cup garlic, coarsely chopped
  • 0.5 cup fresh oregano leaves, coarsely chopped (roughly one fresh herb pack from store. Use leaves and all tender parts)
  • 1 tablespoon sherry vinegar, balsamic vinegar or red wine vinegar
  • 2 limes, juiced
  • 1 orange, juiced
  • 1 tablespoon honey
  • 1 tablespoon salt
  • 2 teaspoons ancho powder


  1. Combine all ingredients in a mixing bowl.
  2. Mix until thoroughly combined in a mixing bowl.
  3. Marinate chicken for 6 hours or more.
  4. Prepare indirect grill and cook until done.
  5. Makes enough marinade for 2 lbs. of chicken.
