Cornmeal Fried Oysters with Blue Cheese Dressing

An excellent pupu your guests will love!

Ingredients  

  • Blue Cheese Dressing
  • 1 cup mayonnaise
  • 4 ounces blue cheese, crumbled
  • 0.5 cup sour cream
  • 0.25 cup buttermilk or regular milk
  • 3 tablespoons rice wine vinegar
  • 1 dash worchestershire sauce
  • freshly cracked black pepper, to taste
  • Oysters
  • 1 quart fresh oysters, shucked
  • vegetable oil, for frying
  • 1 cup cornmeal
  • 1 cup instant cornbread mix
  • salt & pepper, to taste

Instructions 

Blue Cheese Dressing

  1. Mix all the blue cheese dressing ingredients together; mix well.
  2. Cover and chill.

Oysters

  1. Heat a cast-iron skillet or thick bottom saute pan.
  2. Add enough vegetable oil for a shallow fry (about 1-1 1/2").
  3. Mix the cornmeal, cornbread mix, salt and pepper in a wide shallow bowl.
  4. Remove oysters from their liquid and roll each in cornbread mix, coating well.
  5. Fry oysters in hot oil and drain on paper towels or a rack set over a sheet pan.
  6. Lightly salt each oysters and serve hot with homemade blue cheese dressing.
