Roasted Hoisin-Glazed Sweet Potatoes

These sweet potatoes are spicy and sweet with a kick of ginger!

Ingredients  

  • 2 pounds sweet potatoes, cut into wedges or 1-1/2 inch chunks(yams)
  • 2 tablespoons shoyu(soy sauce)
  • 1 tablespoon mirin
  • 0.25 cup hoisin sauce
  • 2 teaspoons kochujang or sriracha
  • 1 tablespoon ginger, chopped
  • 1 teaspoon garlic, chopped
  • 0.5 teaspoon toasted sesame seeds(as needed)
  • 1 tablespoon green onion, sliced(for garnish)

Instructions 

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Toss the sweet potatoes with the shoyu, mirin, hoisin, kochujang, ginger, garlic and sesame seeds. Transfer them to a sheet pan lined with foil and sprayed with nonstick cooking spray.
  3. Bake until the sweet potatoes are tender but not overdone, about 40 minutes. Stir them every ten minutes.
  4. Top with green onions and serve hot.

Note: For a more substantial dish, garnish with fresh Chinese Roasted Pork.
