Rocky Road Brownies

Mix two great flavors of desserts into one

Ingredients  

  • Brownies
  • 0.5 cup Butter
  • 1 cup white sugar
  • 2 Eggs
  • 1 teaspoon vanilla extract
  • 0.333333 cup unsweetened cocoa powder
  • 0.5 cup All Purpose Flour
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Baking Powder
  • Frosting
  • 3 tablespoons butter, softened
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1 cup confectioners' sugar
  • 1.5 cups mini marshmallows
  • 0.25 cup toasted almonds

Instructions 

Brownies
  1. Preheat oven to 350°.
  2. Grease and flour an 8" square pan.
  3. Completely melt 1/2 cup butter in the microwave.
  4. Pour into a mixing bowl with a paddle attachment.
  5. Add in the sugar, eggs and vanilla extract.
  6. Beat in cocoa, 1/2 cup flour, salt and baking powder.
  7. Spread batter into prepared pan.
  8. Bake in preheated oven for 25-30 minutes.
  9. Do not overcook.
Frosting
  1. Combine butter, cocoa, honey, vanilla and confectioners' sugar.
  2. Frost brownies while they are still warm.
  3. Sprinkle the marshmallows and toasted almonds over the frosting.
  4. Chill for 1 hour then cut into desired shape.
