Roy's Grilled Ahi with a Mango Smoked Chipotle BBQ Sauce

Chef Roy Yamaguchi shares this excellent recipe for Grilled Ahi with an exotic Mango Chipotle BBQ sauce!

Ingredients  

  • Grilled Ahi
  • 3 tablespoons olive oil
  • 1 lime zest and juice
  • 0.25 cup cilantro
  • salt and pepper, to taste
  • 2 pounds sashimi grade ahi, cut into 4/8 oz. portions
  • BBQ Sauce
  • 3 tablespoons oil
  • 0.5 cup small onion, diced
  • 1 tablespoon garlic, minced
  • 0.5 teaspoon ginger, minced
  • 1 teaspoon cumin
  • 1 tablespoon chili powder
  • 4 chipotle chilies in adobo, chopped (you may add more or less depending on how spicy you like your sauce)
  • 3 tomatoes, diced
  • 2 lime, zested and juiced
  • 2 tablespoons red wine vinegar
  • 3 tablespoons fish sauce
  • 0.25 cup honey
  • 0.25 cup cilantro
  • 2 cups mango, diced
  • 0.5 cup green onions, chopped

Instructions 

Grilled Ahi
  1. Combine olive oil, lime zest and juice, cilantro, salt and pepper into a bowl.
  2. Dip ahi into marinade mixture.
  3. Grill ahi until desired doneness.
  4. Serve with Mango Chipotle BBQ Sauce.
BBQ Sauce
  1. Heat oil in a heavy sauce pot.
  2. Add diced onions, garlic and ginger.
  3. Saute until translucent.
  4. Add cumin and chili powder.
  5. Add the remaining ingredients and turn down the heat to low.
  6. Simmer on low for 1 hour, stirring occasionally.
  7. Remove sauce from heat when it thickens.
  8. Puree BBQ sauce in a blender until smooth and season with salt and pepper.
  9. Note: To avoid being splashed by the hot sauce, fill blender only half way.
