Seared Veal Chops with Bearnaise

Simply delicious

  • 2 tablespoons butter
  • 4 rib veal chops, 5-6 oz. each
  • salt and pepper, to taste
  • Bearnaise sauce, see recipe


  1. Heat butter in heavy large ovenproof skillet over medium high heat.
  2. Sprinkle veal with salt and pepper.
  3. Add veal to skillet and cook until brown, about 3 minutes per side.
  4. Place veal on plate and tent with foil.
  5. Let rest for a few minutes.
  6. Serve with Bearnaise Sauce and asparagus.
