Soba Noodle Salad with Cooked Salmon

Ingredients  

  • 1 soba noodles, 12 oz.
  • 1 tablespoon sesame oil
  • 6 ounces cucumber, seeded and julienned (about1 1/2 cups)
  • 1 red bell pepper, julienned (about 1 cup)
  • 5 scallions, julienned (1/2 cup)
  • 1 cup soba noodle dressing
  • 2 tablespoons sesame seeds, lightly toasted
  • 6 fresh mint, picked
  • 6 fresh cilantro, picked
  • 12 ounces cooked salmon (1 1/2 cups)
  • Garnish
  • slices or diced ripe avocado
  • Dressing
  • 6 tablespoons sugar
  • 0.5 cup light soy sauce
  • 0.5 cup rice wine vinegar
  • 0.25 cup pure roasted sesame oil

Instructions 

Salad

  1. Prepare an ice water bath; set aside.
  2. Bring a large pot of water to a boil.
  3. Add soba noodles, and cook until al dente according to package directions.
  4. Drain, and transfer to ice bath to cool quickly.
  5. Drain again, and place in a medium bowl.
  6. Drizzle with oil, tossing lightly to coat.
  7. Add cucumber, bell pepper, scallions, dressing, sesame seeds and herbs.
  8. Toss gently to combine.
  9. Place on a platter, garnish with cooked salmon and avocado.

Dressing

  1. Combine all the ingredients in a medium bowl.
  2. Whisk to combine.
