Certified Angus Beef at Foodland

I just came back from doing some training with the people from Certified Angus Beef® brand, and I learned a lot about the beef we carry and why we carry it.

I knew it was really good stuff, and I knew that it was premium, but I didn’t really know the details. I walked away from the meeting and was actually blown away with what I learned. And, I can comfortably say that we do carry the best beef in the local grocery industry… you know what, we carry some of the best beef in the entire food service industry!

I thought it might be fun to share some of the info regarding our beef and why I think it’s the best!

First off, the Certified Angus Beef® brand beef comes from Angus cattle. Angus cattle can offer some of the best beef that is available. But there is really more to the beef. It is also USDA choice.

USDA Choice is what a large percentage of restaurants serve. The only grade above that is Prime. When you look at choice, there are 3 tiers in that category. Certified Angus Beef® brand comes from the top 2 tiers.

Many retailers will offer something that is Angus and USDA Choice. But where our beef gets better has to do with additional grading criteria that Certified Angus Beef® brand goes through. There are an additional 9 criteria that USDA Choice Angus beef needs to pass in order to become Certified Angus Beef.

Some of those additional criteria have to do with things like the texture of the marbling, the size of the loin, and the age of the cattle.

Once all the grading criteria is taken into account, a very small percentage makes it to acceptable quality for Certified Angus Beef® brand.

Statistically, what all the tight specifications really boil down to is increased uniformity. There is really no 100% full proof way to create the perfect tender steak, but the grading process really reduces the risk of getting a tough steak.

With Certified Angus Beef® brand, the odds of you having a tough steak is 1 in 50. Other beef brands cannot make this kind of claim.

What was really eye opening for me was the fact that there are ranchers in the Certified Angus Beef® brand family that are hoping to have their cattle make the cut. There is no guarantee that your cattle will become Certified Angus Beef® brand beef. On average, 1 in 4 will qualify.

At the end of the day, you are getting a premium beef product that has some of the most stringent quality guidelines in the beef industry. What that means for you is the most consistent eating experience possible. Great flavor, tenderness and wholesomeness.
