Easy Maakouda

Maakouda recipe from Malika Dudley
“Many cultures have a version of this dish that has been passed down through my family. My own grandmother, Laaba Djellali, used to make this for my mother in Algeria when she was growing up. Easy Maakouda

Summary

Ingredients

5  
Potatoes
2  
Eggs
1⁄2  
onion
   
handful of italian parsley (to taste)
   
leftover meat (omit to make this a vegetarian dish)
   
salt and pepper (to taste)
   
olive oil (for frying)
   
optional: shredded cheese of choice

Instructions

  1. Boil and mash potatoes.
  2. Chop leftover meat, onion and parsley
  3. Mix all ingredients together. Optional: add cheese.
  4. Add salt and pepper to taste.
  5. Form patties with the mixture.
  6. Heat olive oil in a pan.
  7. Fry patties until brown.
  8. Serve with a fresh side salad.

Notes

 Leftovers are delicious as a brunch item with avocado, an over easy egg and sauerkraut.
