Li Hing Cranberry Relish
Chef Brian prepares his favorite Cranberry Relish recipe that is perfect for Thanksgiving. Made with fresh cranberries, pineapple and li hing for a local twist.
Ingredients
- 4 cups Fresh Cranberries
- 2 cups fresh pineapple, peeled, cored, and cut into 1 inch pieces
- 1 cup orange juice
- 2 cups Brown Sugar
- 1 cup water
- 1 tablespoon Li Hing Powder
- 4 Pieces star anise
- 1 package Seedless Li Hing Cherries, chopped
Instructions
- In a pot, combine cranberries, fresh pineapple pieces, water, juice, sugar, and anise. Bring to a boil and reduce to a simmer for about 30 minutes.
- When sauce is slightly thickened, turn off heat and add li hing powder, and seedless li hing cherries, and mix well.
- Remove the 4 star anise and place in refrigerator to chill.
Notes
Sauce can be made up to 5 days in advance.
