Papaya Seed Dressing (quick version)

Hawaii's favorite salad dressing is sweet, tart, and tasty! Its slight peppery kick comes from ground papaya seeds.
Servings 6 Servings


  • 0.5 cup fresh local papaya(cubed)
  • 3 tablespoons papaya seeds with pulp
  • 4 tablespoons white balsamic vinegar
  • 1 tablespoon agave nectar
  • 1 teaspoon dijon mustard
  • 1 cup Maui or Ewa Sweet Onions(minced)
  • 0.25 teaspoon fresh ginger, grated
  • 0.5 teaspoon Salt
  • fresh ground black peper(to taste)
  • 0.3333 cup olive oil


Place papaya, papaya seeds and pulp in a blender and puree till smooth. Add the vinegar, agave nectar, Dijon mustard, ginger, salt and pepper and blend. Slowly add the olive oil while blending. Adjust seasoning with salt and pepper to taste.
