Pipikaula Fried Rice

Pipikaula Fried Rice

Fried rice made extra tasty by the addition of this Hawaiian dried beef

Servings 4 Servings

Ingredients  

  • 0.25 cup peanut oil
  • 3 cups cooked white rice, day old, dried out uncovered in the fridge
  • 0.5 cup green onions, chopped
  • 0.5 cup pipikaula, diced
  • 0.5 cup bay shrimp
  • 0.5 cup lup cheong, portuguese sausage or chorizo, diced
  • 1 cup peas
  • 2 teaspoons garlic, minced
  • 3 eggs
  • 1.5 teaspoons soy sauce, dark preferred
  • 2 tablespoons sesame oil
  • salt and pepper, to taste

Instructions 

  1. Heat the oil in the wok.
  2. Toss in the rice until hot and golden.
  3. Toss in the green onions, pipikaula, shrimp and sausage.
  4. Stir in the peas, garlic, eggs, soy sauce and sesame oil.
  5. Stir-fry for 2 minutes.
  6. Season with salt and pepper.
