Pipikaula Fried Rice

Ingredients
1⁄4 cup
peanut oil 3 cups
cooked white rice, day old, dried out uncovered in the fridge 1⁄2 cup
green onions, chopped 1⁄2 cup
pipikaula, diced 1⁄2 cup
bay shrimp 1⁄2 cup
lup cheong, portuguese sausage or chorizo, diced 1 cup
peas 2 teaspoons
garlic, minced 3
eggs 1 1⁄2 teaspoon
soy sauce, dark preferred 2 tablespoons
sesame oilInstructions
- Heat the oil in the wok.
- Toss in the rice until hot and golden.
- Toss in the green onions, pipikaula, shrimp and sausage.
- Stir in the peas, garlic, eggs, soy sauce and sesame oil.
- Stir-fry for 2 minutes.
- Season with salt and pepper.
