- 6 pieces Summer roll wrappers, 6 inch
- 3 cups Rice, cooked
- 12 pieces Cucumber, sliced in thin strips

- 3 stalks Green onion, sliced thin
Instructions

- Gather all ingredients to assemble the rolls, including a bowl of warm water large enough to dip the wrappers in and a lightly damp towel.
- Assemble each roll, one at a time. Dip the wrapper in the water and carefully lay on the damp towel.
- Working quickly, spread the rice in a 3” rectangle in the center, top with the pork, cucumber, green onion and cilantro.
- Take the bottom seam and fold it over the ingredients and tuck them in gently. Fold in the sides toward the center then roll forward to complete.
- Repeat with the remaining wrappers. Cut in half and serve
