Portuguese Sausage & Kale Soup

Ingredients
- 2 tablespoons Canola oil
- 10 ounces Purity Hot Portuguese Sausage, sliced into rounds
- 1 large Yellow onion, medium dice
- 4 cups Chicken broth
- 1 can Fire roasted diced tomatoes
- 1 bunch Kale, stems removed, leaves chopped
- Italian parsley (optional)
- Parmesan cheese (optional)
- Lemon (optional)
Instructions
- In a large pot over medium heat, add the oil and sliced sausage and cook until they start to brown, about 5-7 minutes.
- Add the diced onion to the pot with the sausage and cook until translucent and slightly golden, about 2 minutes.
- Add the chicken broth, fire roasted tomatoes, and chopped kale to the pot and bring the mixture to a boil, then reduce to a simmer. Let it cook until the kale is wilted and tender, about 10 - 15 minutes.
- Taste the soup and adjust the seasoning with salt and pepper, if necessary. Serve hot, over rice or with crusty bread if desired.
