Roasted Hoisin-Glazed Sweet Potatoes

2 pounds
sweet potatoes, cut into wedges or 1-1/2 inch chunks (yams) 2 tablespoons
shoyu (soy sauce) 1 tablespoon
mirin 1⁄4 cup
hoisin sauce 2 teaspoons
kochujang or sriracha 1 tablespoon
ginger, chopped 1 teaspoon
garlic, chopped 1⁄2 teaspoon
toasted sesame seeds (as needed) 1 tablespoon
green onion, sliced (for garnish)Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Toss the sweet potatoes with the shoyu, mirin, hoisin, kochujang, ginger, garlic and sesame seeds. Transfer them to a sheet pan lined with foil and sprayed with nonstick cooking spray.
- Bake until the sweet potatoes are tender but not overdone, about 40 minutes. Stir them every ten minutes.
- Top with green onions and serve hot.
Note: For a more substantial dish, garnish with fresh Chinese Roasted Pork.
