Chicken with Herbed Goat Cheese

Ingredients
- 8 bone-in chicken thighs with skin
- 12 ounces herbed goat cheese(recommendation: chevre garlic and herb)
- fresh basil leaves, chopped
- olive oil
- salt and pepper, to taste
Instructions
- Preheat oven to 375F.
- On a baking sheet, place the chicken and loosen the skin from the meat, leaving one side attached.
- Slice the cheese and place 2-3 slices plus several basil leaves under the skin of each chicken thigh. If necessary, use toothpicks to fasten the chicken skin down.
- Rub each piece of chicken with olive oil and sprinkle generously with salt and pepper.
- Bake the chicken for 30-40 minutes until cooked through (internal temperature of 165F). If you like crispy skin, broil for a few minutes.
- Serve alone or with a salad and simple pasta.
