Poulet Basquaise Chicken

“My mother always made Poulet Basquaise Chicken for us growing up, but I hated it because it was made with green bell peppers! She modified it for me and swapped green for red, yellow, and orange. It's one of my favorite dishes and a hit in our household.”

  • 4 pounds cornish game hen(or your choice of chicken)
  • 5 small-medium tomatoes
  • 4 bell peppers(traditionally green)
  • 1.5 medium onions
  • 2 cloves garlic
  • 1 teaspoon olive oil


  1. Chop tomatoes, peppers, onion and garlic.
  2. To a pan, heat olive oil and sauté onions.
  3. Add bell peppers, garlic and cover.
  4. Add tomatoes and cover until it cooks down.
  5. To another pan, heat olive oil and add Cornish game hen.
  6. Cook Cornish game hen for about 30-40 minutes.
  7. Add vegetable mixture to pan with the Cornish game hen.
  8. Serve.
