Poulet Basquaise Chicken
“My mother always made Poulet Basquaise Chicken for us growing up, but I hated it because it was made with green bell peppers! She modified it for me and swapped green for red, yellow, and orange. It's one of my favorite dishes and a hit in our household.”

Ingredients
- 4 pounds cornish game hen(or your choice of chicken)
- 5 small-medium tomatoes
- 4 bell peppers(traditionally green)
- 1.5 medium onions
- 2 cloves garlic
- 1 teaspoon olive oil
Instructions
- Chop tomatoes, peppers, onion and garlic.
- To a pan, heat olive oil and sauté onions.
- Add bell peppers, garlic and cover.
- Add tomatoes and cover until it cooks down.
- To another pan, heat olive oil and add Cornish game hen.
- Cook Cornish game hen for about 30-40 minutes.
- Add vegetable mixture to pan with the Cornish game hen.
- Serve.
