Chicken with Herbed Goat Cheese

  • 8 bone-in chicken thighs with skin
  • 12 ounces herbed goat cheese(recommendation: chevre garlic and herb)
  • fresh basil leaves, chopped
  • olive oil
  • salt and pepper, to taste


  1. Preheat oven to 375F.
  2. On a baking sheet, place the chicken and loosen the skin from the meat, leaving one side attached.
  3. Slice the cheese and place 2-3 slices plus several basil leaves under the skin of each chicken thigh. If necessary, use toothpicks to fasten the chicken skin down.
  4. Rub each piece of chicken with olive oil and sprinkle generously with salt and pepper.
  5. Bake the chicken for 30-40 minutes until cooked through (internal temperature of 165F). If you like crispy skin, broil for a few minutes.
  6. Serve alone or with a salad and simple pasta.
