Green Papaya Chicken Soup with Ginger

This popular Filipino dish is simple to make, full of flavor and proves to be a crave-worthy meal!

Ingredients  

  • 2 tablespoons vegetable oil
  • 1 yellow onion(peeled and cut into slices)
  • 0.75 pound boneless, skinless chicken thighs(cut into 1 inch pieces, excess fat removed)
  • 1 2-inch piece ginger(peeled, sliced into fine strips)
  • 2 clovess garlic(peeled and chopped)
  • 2 quarts chicken broth
  • 1 green papaya(peeled, seeded and cut into 1 inch pieces)
  • 2 tomatoes cut into 1/6th wedges
  • 1 cup watercress or other braising green
  • fish sauce, to taste
  • fresh calamansi or lime juice, to taste

Instructions 

  1. In a large pot, heat the oil. When the oil begins to smoke, add in the onion and cook until translucent.
  2. Add in the chicken and cook until lightly brown.
  3. Add in the ginger, garlic and stock and bring to a boil, then reduce to a simmer. Cook for 30 minutes.
  4. Add in the papaya and cook until tender.
  5. Add in the tomatoes, watercress and cook until just heated through.
  6. Adjust seasoning with fish sauce and calamansi juice.
