Honey Glazed Pork Belly Fried Rice

Ingredients  

  • 3-4 strips of Maika'i Honey Glazed Pork Belly
  • 2 Eggs
  • 4 cups Rice preferably day-old
  • 2 cups Frozen mixed vegetables
  • 1 tablespoon Bachan's Japanese Barbecue Sauce
  • Green onion optional
  • Chinese parsley optional
  • Kim chee optional
  • Pickled red onion optional

Instructions 

  • Start by cutting the pork belly strips into small 1/2-inch slices so it cooks up crispy.
  • Sear the pork belly bites in a pan and flip until both sides are evenly browned. Then transfer them onto a plate with a paper towel to drain excess oil.
  • Whisk eggs and scramble in the same pan with leftover pork belly oil.
  • Once eggs are slightly runny and still undercooked, add in the rice. Mix well and break up any large clumps with your spatula.
  • Add in the frozen vegetables and stir until the rice and veggies are heated through over medium heat.
  • Lower heat and add in the cooked pork bites. Mix everything well together.
  • Add Bachan’s Japanese Barbecue sauce and cracked black pepper to taste.
  • Optional: Add in green onion and/or Chinese parsley. Serve and enjoy with kimchee or pickled red onions.
