Honey Glazed Pork Belly Fried Rice

Ingredients
- 3-4 strips of Maika'i Honey Glazed Pork Belly
- 2 Eggs
- 4 cups Rice preferably day-old
- 2 cups Frozen mixed vegetables
- 1 tablespoon Bachan's Japanese Barbecue Sauce
- Green onion optional
- Chinese parsley optional
- Kim chee optional
- Pickled red onion optional
Instructions
- Start by cutting the pork belly strips into small 1/2-inch slices so it cooks up crispy.
- Sear the pork belly bites in a pan and flip until both sides are evenly browned. Then transfer them onto a plate with a paper towel to drain excess oil.
- Whisk eggs and scramble in the same pan with leftover pork belly oil.
- Once eggs are slightly runny and still undercooked, add in the rice. Mix well and break up any large clumps with your spatula.
- Add in the frozen vegetables and stir until the rice and veggies are heated through over medium heat.
- Lower heat and add in the cooked pork bites. Mix everything well together.
- Add Bachan’s Japanese Barbecue sauce and cracked black pepper to taste.
- Optional: Add in green onion and/or Chinese parsley. Serve and enjoy with kimchee or pickled red onions.
