Panko Crusted Salmon

This dish is also AMAZING as leftovers and served cold over a salad!

Ingredients  

  • 1 1/2 pounds Salmon Fillets
  • 1 1/2 cups panko bread crumbs
  • 0.25 cup Flat Leaf Parsley(Minced)
  • 4 tablespoons Maika`i Maui Onion Garlic Mustard
  • 1 lemon(zested)
  • 2 tablespoons extra virgin olive oil(recommendation: Maika'i Extra Virgin Olive Oil)
  • salt and pepper(to taste)

Instructions 

  1. Preheat oven to 425F.
  2. In a bowl, combine the panko breadcrumbs, parsley, lemon zest, 2 tablespoons of olive oil, and salt and pepper. Set aside.
  3. Season the salmon with salt and pepper to your desire.
  4. Spread a layer of the Maika`i Maui Onion Garlic Mustard on the salmon.
  5. Spoon a generous amount of the panko mixture on the salmon and press it down with your hands.
  6. Cook the salmon on an oven safe pan with a little oil on the stove over medium high heat for 4 minutes. Skin side down.
  7. Transfer the pan to the oven and cook for an additional 4-8 minutes or until your desired doneness.
  8. Garnish with lemon wedges and fresh parsley.
