Pineapple Cole Slaw

Cole Slaw with an island twist

  • Dressing
  • 0.25 cup cider vinegar
  • 1 cup mayonnaise
  • 0.333333 cup honey
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • Coleslaw
  • 4 pounds shredded coleslaw mix
  • 1 pound pineapple, drained, chopped or crushed


  1. Combine the shredded cabbage, carrots and green onions with the drained crushed pineapple.
  2. Mix the vinegar, honey, mayonnaise, salt and pper together to make the dressing.
  3. Dress the cabbage mix with the dressing until well coated.
  4. Refrigerate below 40° and allow flavors to marry for at least 1 hour.
