Roy's Fried Garlic Marinade for Shrimp

A great way to make shrimp tastier than ever

Ingredients  

  • 0.5 cup fish sauce
  • 0.25 cup brown sugar
  • 4 limes, juiced
  • 4 lemons, juiced
  • 2 oranges, zested and juiced
  • 10 basil leaves, julienne
  • 0.25 cup cilantro, chopped
  • 1 lemongrass, white part only, minced
  • 3 kaffer lime leaves, crushed
  • 2 tablespoons sambal chili sauce
  • 0.25 cup peanut oil
  • 10 garlic cloves, finely minced
  • 2 shallots, sliced

Instructions 

  1. Using a bowl add together the first 10 items and allow the sugar to dissolve about 5 minutes.
  2. Set aside.
  3. In a sauce pan heat the peanut oil.
  4. Fry the minced garlic and shallow in the peanut oil until golden brown and quickly add to your bowl of reserved ingredients.
  5. Refrigerate marinade for 2 hours before adding in shrimp.
  6. Allow shrimp to sit in marinade for 30 minutes before grilling.
