Sautéed Pork Loin with Mango Chutney

Simply "mango-licious!" This dish is the perfect way to add color and flavor to your dinner routine!

Ingredients  

  • 4 boneless pork loin chops(thin cut)
  • salt & pepper
  • 2 tablespoons olive oil or vegetable oil
  • For Mango Chutney
  • ripe mango(peeled, flesh removed from pit and cut into 1/2 in. pieces)
  • 0.25 chopped onion
  • 2 tablespoons Raisins or dried cranberries
  • 0.5 cup pineapple juice or apple juice (or similar fruit juice)
  • 2 tablespoons cider vinegar
  • 3 tablespoons Brown Sugar
  • 2 teaspoons chopped ginger
  • 1 pinch red chili flakes

Instructions 

 

  1. Pat dry and season the boneless pork loin chops with salt and pepper.
  2. Heat a large skillet. Add in the oil. When the oil starts to ripple in the pan, add in the pork loin chops. If the 4 don’t fit with some space to move around, cook in 2 batches.
  3. Cook the pork on one side until golden brown, approximately 3 minutes. Flip and cook for 2 more minutes. Reserve on a platter.
  4. Once all the pork is cooked, using the same pan, combine all the ingredients for the mango chutney. Bring to simmer and cook until the mango mixture is thickened and shiny. Serve on the pork, or on the side.
