Somen Watercress Salad

“I grew up with my mom making a version of this salad, which is a popular dish for family gatherings in Hawai`i. It’s a great dish to make all year round!”

  • 1 package somen noodles
  • 16 ounces firm tofu
  • 1 bunch watercress
  • 24 small red tomatoes(plum or cherry tomatoes)
  • Maika'i Asian Sesame Dressing
  • 0.5 cup green onion(optional)


  1. Cook somen noodles according to package directions.
  2. Drain noodles and rinse.
  3. Use a fork to twirl servings of somen noodles into balls. Place in a layer in a 13×9-inch dish.
  4. Drain tofu and press out liquid. Cut tofu into small cubes and put on top of somen noodles.
  5. Cut watercress into 1-inch pieces and cut tomatoes in half. Add to salad.
  6. Serve immediately with dressing or make ahead of time and store in the fridge until you’re ready to serve.

Optional: Sprinkle green onion evenly over noodles and tofu.
