Taco Bell Peppers
"My inspiration for this dish came from my love of Mexican food and of fresh, healthy ingredients. One of the things I love about this recipe is that the bell peppers still manage to have a bit of crunch to them, even though they’ve been cooked for about an hour. The garnishes can be as creative as you are!”
