Glazed Pork Sirloin Roast with Pineapple Vinaigrette

Ingredients
- Glazed Pork Sirloin Roast
- 3 pounds Pork Sirloin Roast
- Butcher's Twine
- Glaze
- 1/3 cups Pineapple Preserves
- 2 tablespoons pineapple juice
- 1 tablespoon soy sauce
- 1 tablespoon ginger, minced
- 2 tablespoons whole grain mustard
- salt & pepper
- Vinaigrette
- 1/3 cups pineapple juice
- 1/4 cups red wine vinegar
- 1/3 cups olive oil
- salt & freshly ground pepper
- Optional
- 1/4 cups li hing pineapples, diced
- 1/2 cups Pineapple Preserves
- 1 bunch fresh Italian parsley, rough chopped
- butchers twine
Instructions
- Mix ingredients for glaze together.
- Preheat oven to 375°
- Line a baking sheet with foil and set a rack in the middle of oven.
- Tie up the pork sirloin with butchers twine and season with salt/pepper.
- Heat up a pan to medium-high heat and sear the pork sirloin on all sides.
- Place on lined baking sheet and glaze pork sirloin with half the glaze. Reserve other half and glaze pork sirloin every 20 minutes.
- Roast pork until internal temperature reaches 145°; about 1 hour.
- While roast is in the oven. Mix all ingredients for the vinaigrette together and set aside.
- When roast is finished, rest for 10-20 minutes before cutting.
- Serve roast with vinaigrette, fresh chopped Italian parsley and diced li hing pineapples. Also serve with a side of pineapple preserves.
