Classic Cornflake Cookies

Low on effort but not in flavor! These classic, crispy and crunchy treats are great for holiday drop-ins and cookie swaps!

Servings 2 dozen


  • 1 cup Butter(2 sticks)
  • 0.75 cup sugar
  • 1 1/2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon Baking Powder
  • 1 cup cornflakes


  1. Preheat oven to 350 degrees; lightly grease two 9”x13” baking sheets.
  2. Combine flour and baking powder and sift.
  3. In a large mixing bowl, cream together butter, sugar and vanilla until fluffy.
  4. Incorporate the sifted dry ingredients.
  5. When incorporated, add in corn flakes.
  6. Drop by teaspoonful onto prepared baking sheets.
  7. Bake 12-15 minutes or until the cookies have an even brown edge.
  8. Cool.
