Maika'i Roast Turkey
The holiday season means get-togethers with family and friends and, of course, Turkey! Try this classic, simple and seriously delicious recipe for a Maika'i Roast Turkey!
Ingredients
- 1 Turkey, 12 - 20 lbs. gross weight
- 2 onions, medium sized
- 1 carrot, medium sized
- 1 celery stalk
- 6 sprigs fresh thyme
- 1 lemon
- 3 cloves garlic
- 1 stick of butter
- salt & pepper, as needed
Instructions
- Adjust oven rack to lowest position and preheat oven to 400° F.
- Place defrosted turkey in sink and remove refrigerated turkey from bag.
- Remove legs from clamp by pressing each leg down and pushing it in toward the cavity. Don’t remove clamp from the turkey- you’ll use it during roasting.
- Remove the giblets and neck.
- Thoroughly dry inside and out with paper towels.
- Mix the onion, carrot, celery, thyme, lemon, and garlic and place this mixture in body cavity.
- Re-tuck legs into clamp.
- Place the whole turkey, breast-side up, on a roasting rack, inside a shallow roasting pan.
- Brush with the melted butter.
- Season liberally with salt and pepper.Place the whole turkey in the oven at 400° F for 30 minutes.
- Remove turkey from oven and baste skin with drippings.
- Turn the oven temperature down to 325˚F.
- Return turkey to oven and roast, basting and rotating in the oven every 15-20 minutes.
- Roast until turkey breast registers 165° F. and thigh registers at 180 F (using an instant read meat thermometer) and juices run clear.
- Remove turkey from oven. Allow the cooked turkey to stand for at least 20 minutes.
