Maika'i Roast Turkey

The holiday season means get-togethers with family and friends and, of course, Turkey! Try this classic, simple and seriously delicious recipe for a Maika'i Roast Turkey!

Ingredients  

  • 1 Turkey, 12 - 20 lbs. gross weight
  • 2 onions, medium sized
  • 1 carrot, medium sized
  • 1 celery stalk
  • 6 sprigs fresh thyme
  • 1 lemon
  • 3 cloves garlic
  • 1 stick of butter
  • salt & pepper, as needed

Instructions 

  1. Adjust oven rack to lowest position and preheat oven to 400° F.
  2. Place defrosted turkey in sink and remove refrigerated turkey from bag.
  3. Remove legs from clamp by pressing each leg down and pushing it in toward the cavity. Don’t remove clamp from the turkey- you’ll use it during roasting.
  4. Remove the giblets and neck.
  5. Thoroughly dry inside and out with paper towels.
  6. Mix the onion, carrot, celery, thyme, lemon, and garlic and place this mixture in body cavity.
  7. Re-tuck legs into clamp.
  8. Place the whole turkey, breast-side up, on a roasting rack, inside a shallow roasting pan.
  9. Brush with the melted butter.
  10. Season liberally with salt and pepper.Place the whole turkey in the oven at 400° F for 30 minutes.
  11. Remove turkey from oven and baste skin with drippings.
  12. Turn the oven temperature down to 325˚F.
  13. Return turkey to oven and roast, basting and rotating in the oven every 15-20 minutes.
  14. Roast until turkey breast registers 165° F. and thigh registers at 180 F (using an instant read meat thermometer) and juices run clear.
  15. Remove turkey from oven. Allow the cooked turkey to stand for at least 20 minutes.
